“Extra Vergine” is a quality designation that refers to the careful extraction of oil at low temperatures that largely retains the valuable properties of the olive itself.
Koroneiki olive trees are extremely hardy and produce small fruit with an intense flavour. They are the most common variety in Greek olive plantations although they are not suitable for modern high-yield cultivation.
