Prawn linguine is a delicious and elegant Italian dish that’s quick and easy to prepare. Here’s a recipe for a flavorful prawn linguini:

Ingredients:

  • 12 oz (340g) linguine
  • 1 lb (450g) large prawns, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions:

1. Cook the Linguini:

  1. Boil Water: Bring a large pot of salted water to a boil.
  2. Cook Pasta: Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the linguini and set aside.

2. Cook the Prawns:

  1. Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Cook Prawns: Add the prawns to the skillet and season with salt and pepper. Cook until they turn pink and opaque, about 2-3 minutes per side. Remove the prawns from the skillet and set aside.

3. Prepare the Sauce:

  1. Sauté Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  2. Deglaze with Wine: Pour in the white wine and bring to a simmer. Cook for 2-3 minutes, allowing the wine to reduce slightly.
  3. Add Tomatoes: Add the halved cherry tomatoes and cook until they begin to soften, about 2-3 minutes.

4. Combine and Serve:

  1. Combine Pasta and Sauce: Add the cooked linguini to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach the desired consistency.
  2. Add Prawns and Seasonings: Return the cooked prawns to the skillet. Add the lemon juice, lemon zest, and chopped parsley. Toss everything together until well combined and heated through.
  3. Season: Adjust seasoning with salt and pepper to taste.

5. Serve:

  • Serve the prawn linguini hot, garnished with additional chopped parsley and grated Parmesan cheese if desired. A wedge of lemon on the side is also a nice touch.
