Prawn linguini recipe
Prawn linguine is a delicious and elegant Italian dish that’s quick and easy to prepare. Here’s a recipe for a flavorful prawn linguini:
Ingredients:
- 12 oz (340g) linguine
- 1 lb (450g) large prawns, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh lemon juice (about 1 lemon)
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Cook the Linguini:
- Boil Water: Bring a large pot of salted water to a boil.
- Cook Pasta: Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the linguini and set aside.
2. Cook the Prawns:
- Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Cook Prawns: Add the prawns to the skillet and season with salt and pepper. Cook until they turn pink and opaque, about 2-3 minutes per side. Remove the prawns from the skillet and set aside.
3. Prepare the Sauce:
- Sauté Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
- Deglaze with Wine: Pour in the white wine and bring to a simmer. Cook for 2-3 minutes, allowing the wine to reduce slightly.
- Add Tomatoes: Add the halved cherry tomatoes and cook until they begin to soften, about 2-3 minutes.
4. Combine and Serve:
- Combine Pasta and Sauce: Add the cooked linguini to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach the desired consistency.
- Add Prawns and Seasonings: Return the cooked prawns to the skillet. Add the lemon juice, lemon zest, and chopped parsley. Toss everything together until well combined and heated through.
- Season: Adjust seasoning with salt and pepper to taste.
5. Serve:
- Serve the prawn linguini hot, garnished with additional chopped parsley and grated Parmesan cheese if desired. A wedge of lemon on the side is also a nice touch.
