Ingredients:

For the Piadina Dough:

  • 3 cups all-purpose flour

  • 1 teaspoon salt
  • 1/4 cup lard or olive oil
  • 3/4 cup warm water

For the Chicken Filling:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup arugula or mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded mozzarella or sliced fresh mozzarella
  • Balsamic glaze (optional)

Instructions:

1. Prepare the Piadina Dough:

  1. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and salt.
  2. Add Fat: Cut in the lard or add the olive oil, mixing until the mixture resembles coarse crumbs.
  3. Add Water: Gradually add the warm water, mixing until a soft dough forms. If the dough is too dry, add a little more water, one tablespoon at a time.
  4. Knead Dough: Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
  5. Rest Dough: Cover the dough with a clean cloth and let it rest for at least 30 minutes.

2. Prepare the Chicken:

  1. Season Chicken: In a bowl, combine the olive oil, minced garlic, oregano, basil, salt, and pepper. Add the chicken breasts and coat them with the marinade. Let them marinate for at least 15 minutes.
  2. Grill Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken breasts for about 5-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for a few minutes before slicing thinly.

4. Assemble the Chicken Piadina:

  1. Layer Ingredients: Place a warm piadina on a flat surface. Layer with a handful of arugula or mixed greens, a few slices of grilled chicken, cherry tomatoes, red onion, and mozzarella.
